We are very fortunate
to be able to order chicken directly from
a small family run farm in Greenwich, New
York. Shaw Farm grows “poussin” chickens,
ducks, turkeys, rabbits and also several
egg varieties. The chicken dishes you find
on our menu are predominantly from Shaw
Farm.
Choosing "Certified Sustainable"
The Marine Stewardship
Council, which is independent of any government
or trade group, studies fisheries to determine
whether a catch is carefully monitored and
controlled to prevent over-fishing and poaching.
Only fish from approved areas, considered
sustainable, can carry their seal. Certified
fish accounts for only 10 percent of the
total catch.
